We’re delighted to announce that Stephen Cotter has recently joined us as our new Head Chef at our Claregalway Restaurant. Originally from Cork, Stephen trained in Cork IT and has over 20 years experience in the industry. His international experience includes stints in Ireland, Scotland, Australia, Maylasia and France where he worked in several fine dining establishments including working alongside the 2 star Michelin Chef Michel Rostang at the Meridian in Paris. Most recently, he has spent the past 10 years as Head Chef at Restaurant Albert in Lyon (the Food Capital of France), where he used fresh, seasonal produce to produce tasty and exciting dishes in this fine dining establishment.
Stephen recently returned to Ireland with his family and is looking forward to a fresh & exciting challenge at The Arches. He hopes to build on The Arches’ reputation as a quality, value for money establishment, while adding some interesting dishes to the traditional favourites:
“I’m keen to bring a new dimension to the menu here and intend to use as much local and fresh produce as possible. I want our customers to know that will get top quality food & service at all times, be it for a quick bite midweek, Sunday lunch or for family or special occasion”
So we’re thrilled to welcome Stephen on board and wish him all the best here at The Arches. We’re looking forward to trying out some of the new dishes too 🙂
